Where are the Courses Held

Our training programmes are held at Wyre Forest District Council, Planning, Health and Environment Division, Duke House, Clensmore Street, Kidderminster, Worcs. DY10 2JX. They are accredited by the Chartered Institute of Environmental Health (CIEH) and provide practical training for all levels of responsibility in every sector of the food industry.

CIEH Level 2 Award In Food Safety In Catering

CIEH Level 2 Award in Food Safety In Catering course incorporates fundamental food hygiene knowledge for all food handlers. The course can be delivered in 15 different languages.

Delivery time: 2 half day sessions (9am - 1pm)

Course content:

  • Bacteriology
  • Food poisoning
  • Prevention of food contamination and food poisoning
  • Personal Hygiene
  • Cleaning and disinfection
  • Premises, equipment and pest control
  • Legislation



 

CIEH Level 3 in Implementing Food Safety Management Procedures

CIEH Level 3 Award in Implementing Food Safety Management Procedures is designed for people working at supervisory level or anyone who needs a broad understanding of food hygiene.

Delivery time: 2 half day sessions (9am - 12pm)

Course content:

Food Safety
Microbiology
Food contamination and its control
Food poisoning and food-borne disease
Personal hygiene
Food spoilage and preservation
Food premises and equipment
Cleaning and disinfection
Pest control
The role of the supervisor
Food Safety Legislation
HACCP/hazard analysis

 

CIEH Level 4 Advanced Certificate in Food Hygiene

CIEH Level 4 Advanced Certificate in Food Hygiene is designed for those working in medium to large scale businesses who have responsibility for the management of food hygiene issues, head chefs, trainers, hygiene personnel and hygiene auditors.

Delivery time: Half day sessions over a period of 14 weeks (9:30am - 12:30pm each session)

Course content:

  • Bacteriology
  • Food-borne illness
  • Physical contamination of food
  • Food storage, temperature control and preservation
  • Design and construction of food premises and equipment
  • Cleaning and disinfection
  • Pest control
  • Personal hygiene
  • Training strategies
  • Legislation
  • Management control techniques


HACCP Awareness

Hazard Analysis is a legal requirement for most food businesses. The course is suitable for those responsible for the development and maintenance of the procedure who require training in the application of the HACCP principles.

Delivery time: 2 half day sessions (9:30am - 12:30pm)

Course content:

  • Assess and identify potential hazard points in food production
  • Develop and design their own HACCP system
